    麻婆豆腐的食譜:

    主料:

    1包嫩豆腐切丁1.5厘米

    4盎司牛肉,切碎

    3干紅辣椒,切碎

    1茶匙韭菜,切碎

    蒜末1茶匙

    1/2茶匙生薑,切碎

    莎莎:

    1/2茶匙花椒粉

    1湯匙花椒油

    1大匙,辣椒豆瓣醬

    1/2茶匙黑醬油

    2茶匙辣椒油

    香油少許

    白胡椒一撮

    1杯水

    2茶匙生粉與水混合

    說明:

    1.布蘭克在沸水中約30秒的豆腐,加少許鹽,使最耐用的部件。就拿豆腐瀝乾多餘的水分。

    2.燒熱炒鍋。加入3湯匙油和熱量,中火加熱。加入碎牛肉和煮,直到做得很好。把它拿出來,並把它扔掉。

    lb. fish fillet (Tilapia or Swai fillet, 龙利鱼 has the best result)
    1 pinch of salt
    1 teaspoon black pepper
    3 tablespoon vegetable oil (or canola oil)
    Sweet and sour sauce (糖醋汁)

    Preparation Time: 10 minutes
    Cooking Time: 10 minutes

    Servings: 4

    Cooking Steps
    1. Get 1 lb. fish fillet, cut into 2 inch size 1/4 inch thick pieces, add a pinch of salt, 1 teaspoon black pepper and 1 tablespoon corn starch, mix evenly.
    2. Get a medium size bowl, add 5 tablespoon Chinese black rice vinegar, 5 tablespoon sugar, 6 tablespoon water,1 tablespoon corn starch, mix evenly.
    3. Heat a non sticky wok with 3 tablespoon vegetable oil, place the fish pieces flat on the wok evenly, pan fry for 2 minutes for each side or until both sides turn golden brown.
    4. Pour the sauce from step 2 to the wok, stir evenly and cook for about 2 minutes or until the fish is all fully cooked, add 1 fine chopped green onion, stir evenly.
